Semester Winding Down

Well, I guess that we never gave any tribute to the Saints. So, here it is, to quote Tyler, "THE SAINTS WON THE SUPERBOWL BABY!" We hope that all of you are well. We are creeping up to our one year anniversary! WOW! Time really flies. Graduation is less than a month for me...goodbye college! Well, for now anyway. Maybe one day I will earn my master's, it's in God's hands. Tyler is getting ready to start back up at ULL come the fall, so he will be trucking along to earning his degree - what a wonderful accomplishment that will be. Our sweet Indian neighbors recently treated us to a delicious traditional Indian dessert. Although twice they have given me the name of the dessert, I have forgotten again. It is sweetened dough that is fried and then left floating in a concentrated simple syrup. They sure gave us a wonderful surprise! As many of you know, we have made a transition to nutrient-dense, organic food and with that transition we are trying many new foods. Recently we ate swiss chard, which in a creamy sauce is as tasty as the stems are colorful. If you can get your hands on some, saute it with garlic and onions, add some cream cheese and milk/heavy whipping cream, pour over some pasta and serve with baked fish or chicken...yummmmmy! In addition, we made a quiche which included a HUGE goose egg. Honestly, we were worried that it might taste weird, but it was very tasty! Well family, friends, our loved ones, Happy Easter! Alleluia He is risen!
